Without malt, there’s no beer and no whisky – it’s as simple as that. But what exactly is malt, and how do we transform grain into malt?
To brew beer, we need enzymes that convert the starch in the grain into fermentable sugars. These enzymes are created when the grain begins to germinate, and that’s exactly what we simulate in the malthouse.
We tell the grain that it’s spring, in other words time to germinate. This malting process happens in three steps: steeping, germination, and kilning.
